Ingredients

  • 18 sponge fingers 
  • ½ litre strong coffee
  • Marsala wine
  • 250g mascarpone
  • 50g brown sugar and vanilla sugar
  • 3 eggs
  • Caramel chocolate flakes

Method

  1. Separate the eggs
  2. Beat the yolks with the brown sugar and vanilla sugar
  3. Add the mascarpone while whisking
  4. Apart, whisk the egg whites then gently combine them with the mascarpone mixture using a spatula. Set aside
  5. Quickly dip the sponge fingers in the coffee and line a dish with them
  6. Cover with some of the mascarpone mixture then repeat the layers, finishing with a layer of mascarpone mixture
  7. Grate the caramel chocolate flakes over the dessert
  8. Cool in the fridge for at least 4 hours before enjoying
